Radicchio and Dandelion Greens in Cilantro Lime Dressing

Radicchio and dandelion greens are a few of my favorite greens and these chicories have been coming out of the garden the past few weeks.  Red and white-streaked radicchio and the dark green and red of dandelion greens are beautiful in a salad… they are also super-good for you!

Chiffonade your greens (slice into thin ribbons).  Mix lime juice, sesame oil, and tamari (or use salt) with chopped cilantro.  You could also add a bit of honey if you want a sweeter dressing to pair with these bitter greens.  Toss everything together with cooked soba noodles.

Top with jalapeno slices for a little heat.  Sprinkle with toasted sesame seeds if you like.

Yum.

You could substitute Napa cabbage, escarole, or endive for the greens.
